Quick Roasted Cornish Hen Recipe

1 lemon (zested and juiced)
3 cloves of garlic (finely chopped or made into paste)
1 teaspoon oregano
1/2 teaspoon thyme
1 1/2 teaspoon salt + pepper
1/8 teaspoon of cayenne pepper or chili powder (optional)
2 tablespoon of butter
Two Cornish hens  (1.6 pounds each)

1. Turn oven to 375 degrees (convectional bake).
2. Mix all ingredients in a bowl except the hens.
3. Pat hens dry with paper towels.
4. Add half of the mixed seasoning under the skin and the rest all over the hen.
5. Add a drizzle of olive oil on both hens.

Bake for 1 hour. Basting every 20 minutes with it's own juices.

I used two small hens but this recipe works with chicken as well. The chicken is ready when it hits 165 degrees fahrenheit (75 celsius) or when you poke the breast with a knife and the juices run clear.

Serves 4 people.

Bring Back Memories With JOHNSON’S

“I partnered with JOHNSON’S ® to produce this post. As always all opinions are my own. Thanks for supporting the brands and collaborations that make NY Trendy Moms possible”

Going on vacation for me while growing up wasn’t traveling the world, meeting different people and eating different foods. My vacation as a child was staying with my abuela all Summer long in the Dominican Republic while my mother worked two jobs back in New York. Back then I didn’t realize how great these moments were until I no longer had them.
