Cape away

I love days like these! 52 degrees in February. This definitely meant a walk for my girls and I. I truly didn't want to go back in after I stepped out of the house. I'm a Sagittarius meaning I'm a winter baby. My favorite season is winter but it's not a very good season for kids. I tend to not take them out as much as I wish. So days like these mothers need to take advantage off and enjoy them.

I've gotten so many request to do more outfit and makeup posts.
Here's an OOTD(outfit of the day) Enjoy!

Touchdown!!!

This past Sunday was the Superbowl. & the Giants won of course:) I had a small party for  my family and my husbands family.  I'm not into Football but I am into watching the commercials and the halftime show. I love having an excuse to get everyone together and enjoy my food.

Here are a few pictures of what was on the menu that night, since I was cooking I wasn't able to be the photographer. Thanks to Zack for the great pictures.

Chic Me Up

My style consists on being different. I don't have a specific way of dressing, It all depends on how I'm feeling that day. & yesterday I was feeling pretty awesome. I had 4 hours of sleep without interruptions, and it was the weekend so I was in a pretty good mood.
I rarely enjoy taking pictures as much as yesterday but the view made it impossible not to. This shoot was taken at a park by the river looking over Manhattan. An extremely tranquil place!
It was so difficult to choose the pictures I would be posting. Check them out and let me know what you think about the location on the comment box below. Enjoy:)

Family Day In

I haven't added as many posts as I would like this 2012. The reason being is because the weather in NY is just looney!! & I like to go out for shoots instead of indoor shoots. It was snowing two days ago, yesterday was raining and today is 52 degrees!!! I have no other choice but to post indoor pictures.

This past weekend my younger daughter Hazel who is 9 months old started taking steps by herself. She gets so excited when she takes 3-4 steps, she just starts clapping. She also started pointing to things she wants. She is growing so fast.

Also this past weekend I decided my husband and I needed a 'romantic' dinner without the girls. Things didn't turn out as planned. The babysitter decided to ditch us and my butcher didn't french my chops. You can imagine how I felt after being all day in the kitchen and finding out our plans were ruined.
I cooked Lamb chops, wedged baked potatoes and a roasted green pepper salad.

Here are a few pictures from that snowy day which we spent in doors. Enjoy!!

MLK Weekend!

This past weekend was beyond amazing! So many things happened, I don't even know where to begin.

Thursday my husband decided to cook for the first time. My daughter Zareena was right next to him guiding him:) The outcome was great!
Friday the 13th was my mother in law's birthday and I decided to make her a delicious Carrot Cake with Cheese Cake Frosting. It turned out better than expected.
Saturday the 14th was my Husband's cousin's Birthday.
I spent Sunday and Monday with his Family as well.
Pretty much my weekend was dedicated to my Husband's family!
I also added pictures of my outfit that night. I love the super bright walls, don't you? Let me know what you think on the comment box below:)

Here are a few pictures!!

Warm Up Your Holidays w/ A Hearty Stew

The best way to stay warm on these cold winter days is by eating soup/stews. Sancocho is a popular Latin American stew, mostly made out of chunks of meats and veggies in broth. This is one of those versatile recipes that you can add or leave out anything you don't like.

Don't let the long list of ingredients intimidate you. This is a one pot meal(not really:) and can be stored in the fridge for days.

Things you'll need:

  • 3 quarts plus 1 1/2 cups water, divided
  • 1 (1-pound) beef shank (1 1/2 inches thick)
  • 4 chicken thighs with skin and bone
  • 1 large onion, chopped
  • 1 Cubanelle or other mild frying pepper, chopped
  • 1 red bell pepper, chopped
  • 2 tablespoons chopped garlic (4 to 5 cloves)
  • 1/2 cup chopped cilantro stems (from 2 bunches)
  • 1 teaspoon dried oregano
  • 1 pound unripe (green) plantains
  • 1 pound yuca
  • 1 pound potatoes
  • 1 pound Caribbean pumpkin or butternut squash
  • 2 ears corn, cut into 1 1/2-inch rounds
  • 6 tablespoons fresh Seville orange juice (or 3 tablespoons regular fresh orange juice plus 3 tablespoons fresh lime juice)

  • Accompaniments: white rice; hot sauce; sliced avocado
Garnish: chopped cilantro

Preparation

Pat beef and chicken dry, putting them in separate bowls. Toss meat in each bowl with 1/2 teaspoon salt.
Heat oil in a skillet and brown beef turning occasionally, about 7 minutes. Transfer to pot with slotted spoon. Brown chicken in same manner, transfer to pot.
Add onion, peppers, garlic, and 1/2 teaspoon salt to skillet and sautƩ until softened. Add 1 cup water and boil, 1 minute. Transfer vegetable mixture to pot. Add cilantro stems, oregano, 2 teaspoons salt, 1/2 teaspoon pepper, and remaining 3 quarts water to pot and bring to a boil. Skim off any foam, then simmer, partially covered, stirring occasionally, until meat is tender, about 1 1/2 hours.
While meat simmers, remove green skin from plantains and cut crosswise into 1-inch-thick pieces.
Peel yuca removing waxy brown skin and pinkish layer underneath, cut crosswise into 2-inch pieces, Quarter lengthwise and cut out coarse center fiber.
Seed and peel calabaza, then cut into 1 1/2-inch pieces.
Add plantain, potato and yuca to ten in pot and simmer, partially covered, stirring occasionally, 15 minutes. Add calabaza, then simmer, partially covered, stirring occasionally, 20 minutes.
Add corn and simmer, partially covered, stirring occasionally, until corn is tender and all root vegetables are very tender (yuca should be translucent), 10 to 15 minutes. Sancocho broth should be slightly thickened from root vegetables; If not scrape a plantain and add it to the broth. If it's too thick, thin with additional water. Stir in juice and reheat, then season with salt and pepper.

You can substitute a few ingredients with  beef or chicken cubes(the cubes tend to be very salty,so go easy on the salt if using them)

I scrape a plantain for a thicker consistency in my stew

This is my injection of spiciness

Enjoy!
